This “L’Absolu” cuvée celebrates the 10th anniversary of Domaine du Chant d’Eole . It's an extra brut Belgian sparkling wine produced using the traditional method, under the Belbul label . It will appeal primarily to fans of Blanc de Blancs (100% Chardonnay). But above all: it has benefited from an exceptional 80 months of aging on the lees ! This extended maturation gives it a complexity rarely achieved in sparkling wines. Furthermore, it's a limited edition of 5,000 numbered bottles . In short, there won't be enough for everyone…

The Chant d'Éole estate is located in Quévy , in the province of Hainaut , on the French border. It lies precisely halfway between Mons and Maubeuge . The venture began in 2010 , the result of a partnership between the Ewbank family of Wespin , the farmers who own the land, and a renowned family of Champagne winemakers.
Hubert Ewbank envisioned a completely different future for these farmlands: creating a large-scale vineyard in Wallonia. The gamble paid off because, thanks to gradual growth, the estate now covers 54 hectares , making it the largest vineyard in Belgium today.
The range now includes three sparkling wines (Blanc de Blancs, Rosé, Réserve), the Spritz and the Elixir Saint-Georges.
Facing due south, the vineyard benefits from very chalky, limestone soil . It lies on the same geological vein as Champagne, which provides perfect drainage. Planting began in 2011 with 180,000 vines on 20 hectares. Currently, there are more than 490,000 vines . The grape varieties have remained very stable since the beginning:
For its sparkling wines, the estate rigorously applies the traditional method. After manual and mechanical harvesting, the winemaking process follows a classic protocol:
Recognizable by its contemporary architecture combining wood and glass, the site has become a major tourist attraction with over 30,000 visitors per year . Visitors can explore either through a comprehensive 1 hour 15 minute guided tour (from terroir to bottle) or by strolling independently along an educational trail through the vineyards.

In May 2025, the Belgian wine industry reached a milestone with the official launch of the BelBul label . The initial problem was the lack of clarity compared to foreign AOCs (Champagne, Cava, Prosecco). The solution was simple: a linguistic contraction designed to unite the Walloon and Flemish markets.
This choice was validated by a market study on a panel of 300 people, with a 98% acceptance rate , the term being considered modern and sufficiently differentiating for export.

Today, out of the approximately 290 producers listed (2023 figures), more than 100 estates produce sparkling wine and are eligible for the label.
More than just a trademark, the label is a certification of quality and origin. To obtain approval, the producer must comply with a rigorous set of specifications based on 5 pillars:
